Plenty 'o Pumpkins Pumpkin and assorted other winter squash grow in abundance at this time of year here in the Northern climes. They are hearty, versatile vegetables that limit themselves only to the amount of time you have to cook them. They are best baked or stewed, or steamed and pureed to create a base for soups . To choose a good squash make sure it has a hard skin with no softenss and that is is heavy for it's size. North America is home to a great many varieties, including butternut, acorn, hubbard, and spaghetti. (not to mention the ever popular pumpkin)
