Cooks Ingredients

These are just basics for the kitchen

once you have these on hand you are ready to rock and roll!

  • Vegetables

Lettuce, spinach (frozen or fresh), celery, tomatoes, peppers (green & red), onions (red, white, spanish), garlic, shallots (scallions), carrots, potatos, corn (fresh, frozen or tinned), peas (fresh or frozen), chick peas (tinned or fresh), mushrooms


  • Herbs

Fresh - basil, coriander, mint, parsley, dill

Dried - bay leaves, oregano, rosemary


  • Spices

Sesame seeds, cayenne pepper, peppercorns (black, red, green), garlic powder, paprika ( mild & Hungarian), saffron, ginger, chili (powder & flakes), vanilla (bean & liquid)


  • Seasonings

Stock bouillon (cubes or powder), salt


  • Mustards

Dijon, grain, Chinese (very spicy), any mustard combined with herbs, wines etc.


  • Oils

Olive oil regular and extra virginl, corn oil, peanut oil, sesame oil


  • Vinegars

Wine vinegar, rice wine vinegar (Chinese), balsamic vinegar, flavored vinegars


  • Fruits

Peaches, cherries, pears, plums, berries (can be frozen or fresh), oranges, grapefruit, lemons, limes, apples, melons, pineapple (in season), bananas


  • Nuts

Shelled walnuts, shelled pecans, cashews, almonds (shelled, slivered or ground), pine nuts


  • Grains & grain products

All purpose flour, long grain rice, wild rice, basmati rice, burgul, couscous


  • Pastas

Angel hair (thinnest), spaghetti or spaghettini (thin), tagliatelle or fettuccini (wide), lasagne (widest) Assorted shapes ie: fusilli, pennini, farfalle, tubetti; Assorted stuffed (frozen) ie: tortellini, ravioli cappeletti; Assorted pastas to be stuffed ie: cannelloni, manicotti


  • Baking ingredients

Eggs, yeast, baking soda, baking powder, cream of tartar, cornstarch, gelatin, almond paste


  • Sugars & syrups

Granulated sugar, icing sugar, maple syrup, corn syrup, honey


  • Fats & milk products

Milk, buttermilk, cream, whipping cream (35%), yogurt, butter (salted & unsalted), sour cream


  • Cheeses

Cream cheese, cottage cheese, mozzarella (can be frozen) Emmental (can be frozen), cheddar (can be frozen) Jarlsberg (can be frozen), provolone (can be frozen) Parmesan (Reggiano is the best)
