      1 cup Basmati Rice
      1/2 cup fresh Mint
      1/2 cup Coriander
      2 Green Onions
      1/4 cup Oil
      1/2 teaspoon Salt
      2 cups Water


    Wash the rice well and let soak for about 30 minutes.
    Chop the herbs and green onion.
    Heat the oil in a large saucepan, and add the rice, stirring well to coat all the grains.
    Add the herbs and the green onion. Toss.
    Pour in 2 cups of water, stir and bring to a boil.
    Cover, reduce heat and simmer for 18 minutes.
    Turn off the heat, but leave in the pan for another 15 minutes.
    Fluff with a fork and serve.
