1 lb. potatoes, peeled and chunked1 lb. pumpkin, peeled and chunked 1 onion, finely chopped 1/4 cup butter salt and pepper, to taste
Boil together potatoes and pumpkin. Drain. Sauté onion in butter until crispy but not burnt. Mash potatoes and pumpkin together and stir in fried onions (butter and all). Season
to taste and serve.
