4 Chicken breasts, minced* 3 tablespoons Butter 1 cup finely chopped Red pepper 6 Shallots, minced 2 cups Bread crumbs 2 beaten Eggs 1/2 cup Cream
or Milk 2 tablespoons Dijon mustard 2 tablespoons minced fresh Herbs Salt & pepper -- to taste * I prefer to mince my own chicken as I can ensure that I am only getting meat
with no fat. I am sure, however, that any reliable butcher will do it for you. This dish is equally good with all dark meat or a mixture of both!
Mix all ingredients together. Chill at least 1 hour or as long as overnight. Shape chicken mixture into large-ish burgers. Grill over med-high heat on a piece of greased aluminum foil
or in a greased grill basket about 5 - 8 minutes per side, depending on thickness.
