Salmon & Strawberry-Pasilla Salsa

    Ingredients:

      2 8oz. Salmon fillets
      1 pint fresh strawberries
      1 tablespoon fresh sage
      1 small to medium sized pasilla chile (or chile of choice)
      1 tablespoon chopped red onion
      1 tablespoon virgin olive oil
      1 teaspoon raspberry vinegar (or red-wine vinegar)
      Salt and pepper
       

    Directions:

    Make Salsa: Chop strawberries, sage, pasilla chile, red onion, and combine with olive  oil. Season to taste with salt and pepper.

    Season Salmon with salt and pepper and grill over hot coals 6-8 minutes on each side  until desired doneness.

    Place a generous 2-3 tablespoons of salsa over salmon and serve.
