      White Wine Marinade

        1-1/2 cups White Wine
        1/2 cup fresh Lemon Juice
        1 tbsp. Lemon Zest
        1/4 tsp. Tabasco
        1/2 cup Olive Oil
        3 Garlic Cloves, minced
        3-4 tbsp. chopped fresh Herbs
        1 tsp. dried Oregano
        1 tsp. chopped fresh Rosemary
        Salt & black pepper to taste

      4 Fish Steaks - about 1 inch thick each


    Marinate the fish for up to one hour. You can use any firm-fleshed fish here, including  swordfish, salmon, tuna, shark halibut etc. Place the fish in a greased grill basket or on  a piece of greased aluminum foil and grill over medium to hot coals for about 3 minutes  per side depending on the thickness of your fish. Test for doneness and serve with lemon  wedges.
