Marinate the fish for up to one hour. You can use any firm-fleshed fish here, including swordfish, salmon, tuna, shark halibut etc. Place the fish in a greased grill basket or on a piece of greased
aluminum foil and grill over medium to hot coals for about 3 minutes per side depending on the thickness of your fish. Test for doneness and serve with lemon wedges.
