Pears Poached in Red Wine

    Ingredients:

      4 medium pears, very firm*
      1/2 cup sugar
      1 cup dry red wine
      1 clove
      1/2 tsp. vanilla
      *The pears should be firm, just yielding to the touch. If they are too ripe they will get  mooshy.

    Directions:

    Peel pears carefully, retaining the stem. Cut a small slice across the bottom so they  will stand upright, Lay pears on their side in a shallow saucepan and add the other  ingredients. Bring to a boil and simmer covered for 25-30 minutes, turning after 15  minutes. Check for doneness with a small sharp knife. Remove pears and stand in a dish  just large enough to hold them. Reduce the liquid to a syrup, 1/2 cup or less; it will  start to foam when ready. Pour over pears. Periodically baste them during the day and they  will develop a lovely rich glossy red coat. Serve with whipped cream and syrup.
