1 Cup Sugar
1 Teaspoon Vanilla Extract
1/2 Cup Oil
3 Tablespoons Orange Juice (Or Water)
1 1/2 Cups Flour
2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1 1/2 Pounds Italian Blue Plums -- Pitted & halved
Preheat oven to 350o.
Beat eggs, sugar and vanilla until fluffy.
Beat in oil.
Add liquid alternately with dry ingredients, and beat just until smooth.
Spoon 1/2 the
batter into a lightly greased 8-1/2" springform pan.
Spread evenly with a rubber spatula.
Add 1/2 the plums, cut side down.
Cover with remaining batter.
Add balance of plums, placing them in a nice pattern.
Bake for 60 -65 minutes, until nicely browned.
You can substitute the small red plums if the blue plus are out of season
Also works well with apples and pears!
