Blueberry Coffee Cake

    Ingredients:

      1 1/4 cups all-purpose flour
      1/2 cup sugar
      2 teaspoons baking powder
      1/2 teaspoon cinnamon
      1/4 teaspoon salt
      1/2 cup skim milk
      3 tablespoons oil
      1 egg, well beaten
      1/2 teaspoon vanilla
      1 1/2 cups fresh or frozen blueberries
      2 tablespoons sugar
      1/2 teaspoon cinnamon
       

    Directions:

    Heat oven to 350 degrees F. Grease an 8 x 8-inch pan. Combine flour, sugar, baking  powder, cinnamon and salt in a medium bowl. Make a well in center. Combine milk, oil,  eggs, and vanilla. Add all at once to flour mixture. Stir until dry ingredients are  moistened and liquid is evenly distributed. Pour batter into pan. Spread blueberries over  top of batter. Combine sugar and cinnamon. Spoon over blueberries. Bake at 350 degrees F.  for 40 minutes or until knife inserted in center comes out clean.
