    Ingredients

      1 package Filo Dough
      Olive Oil, for brushing
      3 tablespoons Olive Oil for sautéing
      2 pounds washed Spinach Leaves
      1 bunch Scallions (green onions), chopped
      1/2 pound Feta Cheese (optional)
      1/2 Cup grated Parmesan Cheese
      3 cloves Garlic minced
      Pepper to taste
       

     

    Directions

    Heat the 3 tablespoons of oil in a large pot.
    Add the onions and garlic and sauté for 3 minutes.
    Add the spinach and cook, stirring, until the spinach wilts.
    Place mixture in a colander and let drain completely.
    Mix in feta when spinach is all drained.
    Choose the shape of the Spanokopita that you want to use.
    For the rectangular shape bake in preheated 350o oven for about 35 minutes, and  for triangles, about 20 minutes.
