Put 1 teaspoon of superfine or icing sugar and 2 teaspoons of water into a tall glass for each person. Stir to dissolve.
Add 3 - 4 sprigs of fresh mint, fill each glass with crushed ice and pour over a large measure of bourbon (actually I use vodka, but that's not a true Mint Julep!) Put a few more sprigs of mint on top and serve with a straw.
